INGREDIENTS
Dough:
- 2 tbsp. yeast
- 2 tsp. sugar
- 1 c. lukewarm water
- 1 c. scalded milk
- 2 c. flour
- 3/4 c. butter or oil
- 3 eggs
- 4 egg yolks
- 1 tsp. vanilla
- 6-1/2 c. flour (enough to make a soft dough)
- 3/4 c. sugar
- 1 tsp. salt
DIRECTIONS
A dish from the traditional Ukrainian Christmas Eve supper.
Dough:
- Dissolve yeast and 2 teaspoons sugar in 1 cup of lukewarm water. Add 1 cup warm water, scalded milk and 2 cups flour. Beat until smooth.
- Cover bowl and put in warm place to rise, until light and bubbly.
- Cream butter and 3/4 cup sugar; add eggs, yolks, salt and vanilla. Beat until light. Combine with first mixture and knead to a soft dough.
- Add flour, mix well and knead. Allow to rise until double in bulk.
- Punch down and let rise again. Roll out on a floured board and cut with round cookie cutter.
- Place 1 teaspoon of filling in each circle of dough and seal edges.
- Place pampushky, seal side down, on clean towel. Allow to rise. Fry in hot Mazola oil.
Poppy Seed Filling:
- 2 c. poppy seeds
- 1 egg white
- 1/2 c. sugar
- 4 tbsp. honey
- 1 tsp. cinnamon
- Boil poppy seeds in water for 1/2 hour; drain.
- Let stand 1 hour, then put through finest blade of food chopper.
- Add egg white, sugar, honey and cinnamon. Mix well.
