PUSCH GENEALOGY

INGREDIENTS

Dough:

  • 2 tbsp. yeast
  • 2 tsp. sugar
  • 1 c. lukewarm water
  • 1 c. scalded milk
  • 2 c. flour
  • 3/4 c. butter or oil
  • 3 eggs
  • 4 egg yolks
  • 1 tsp. vanilla
  • 6-1/2 c. flour (enough to make a soft dough)
  • 3/4 c. sugar
  • 1 tsp. salt

DIRECTIONS

A dish from the traditional Ukrainian Christmas Eve supper.

Dough:

  1. Dissolve yeast and 2 teaspoons sugar in 1 cup of lukewarm water. Add 1 cup warm water, scalded milk and 2 cups flour. Beat until smooth.
  2. Cover bowl and put in warm place to rise, until light and bubbly.
  3. Cream butter and 3/4 cup sugar; add eggs, yolks, salt and vanilla. Beat until light. Combine with first mixture and knead to a soft dough.
  4. Add flour, mix well and knead. Allow to rise until double in bulk.
  5. Punch down and let rise again. Roll out on a floured board and cut with round cookie cutter.
  6. Place 1 teaspoon of filling in each circle of dough and seal edges.
  7. Place pampushky, seal side down, on clean towel. Allow to rise. Fry in hot Mazola oil.

Poppy Seed Filling:

  • 2 c. poppy seeds
  • 1 egg white
  • 1/2 c. sugar
  • 4 tbsp. honey
  • 1 tsp. cinnamon
  1. Boil poppy seeds in water for 1/2 hour; drain.
  2. Let stand 1 hour, then put through finest blade of food chopper.
  3. Add egg white, sugar, honey and cinnamon. Mix well.
