INGREDIENTS

  • 30 lb. ground beef & pork
  • 1/2 c. salt
  • 1/3 c. black pepper
  • 1/4 c. paprika
  • 4-1/2 tsp. garlic salt or 1 head fresh garlic
  • 3 tsp. cayenne
  • 1 or 2 qt. cold water

DIRECTIONS

  1. Mix all ingredients and put in casing. Smoke for 3 or 4 hours.
