INGREDIENTS

  • 1 c. white sugar
  • 1 c. Mazola oil
  • 3 eggs
  • 1-1/2 tsp. cinnamon
  • 1-1/2 c. flour
  • 1-1/2 tsp. baking powder
  • 1 tsp. soda
  • 1 tsp. vanilla
  • 1 c. chopped nuts
  • 2 c. finely grated carrots

DIRECTIONS

  1. Beat oil and sugar at high speed of electric mixer. Add 1 egg and beat. Repeat with remaining eggs.
  2. Sift dry ingredients and add to first mixture, 1/3 at a time, beating at medium speed.
  3. Add vanilla, then fold in nuts and carrots.
  4. Pour into 8x10 inch greased and floured pan.
  5. Bake at 350 degrees F. for 35 to 45 minutes.
