INGREDIENTS

  •  1 gal. green tomatoes
  • 12 lge. onions
  • 3 c. brown sugar
  • 3 c. vinegar
  • 3 tbsp. whole mixed pickling spice
  • 1 tbsp. celery seed
  • 1 tbsp. turmeric

DIRECTIONS

  1. Slice omatoes and onions; arrange in layers with generous sprinkling of salt between each layer. Let stand overnight. In the morning, drain and wash thoroughly.
  2. Tie all spices in cheesecloth bag; boil with vinegar and sugar.
  3. Add to tomatoes and onions. Boil gently for about 45 minutes, then remove spice bag and pack in jars.
  4. Seal.
