PUSCH GENEALOGY

INGREDIENTS

  • 4 c. mashed pumpkin
  • 4 c. brown sugar
  • 4 heaping tbsp. flour
  • 2 tsp. each cloves, nutmeg & allspice
  • 1-1/2 tsp. ginger (scant)
  • 4 eggs
  • 4 c. milk
  • 4 or 5 unbaked pie shells

DIRECTIONS

  1. Mix first 5 ingredients in large kettle (a Dutch oven is good).
  2. Beat eggs and milk together. Add to first mixture.
  3. Cook over low-medium heat until filling bubbles and begins to thicken, stirring frequently.
  4. Fill unbaked pie shells with hot filling. Bake at 450 degrees F. for 45 minutes (can reduce heat to 400 degrees F. after 15 to 20 minutes).

YIELD: Approximately four pies.
