INGREDIENTS

  • 2 c. bran
  • 3 c. white sugar
  • 1 c. oil
  • 2 c. boiling water
  • 4 eggs
  • 3 tbsp. soda
  • 1 tbsp. salt
  • 5 c. flour
  • 4 c. buttermilk or sour milk
  • 4 c. bran cereal
  • 1 c. raisins

DIRECTIONS

  1. In large bowl, pour boiling water over bran, sugar and oil. Cool.
  2. Add eggs and beat well.
  3. Beat in soda, salt, flour and milk.
  4. Stir in bran cereal and raisins.
  5. Bake at 375 degrees F. for 25 minutes.

You can keep this in the refrigerator for up to two weeks; bake as many muffins as you need so you have fresh muffins every time.
