INGREDIENTS

  • 6 lge. tomatoes, very ripened
  • 1 lge. onion
  • 1 tbsp. butter or olive oil
  • 1/2 c. water *
  • 1 tsp. baking soda
  • 2 c. milk
  • Salt & pepper, to taste

DIRECTIONS

  1. Peel and chop tomatoes.
  2. Dice onion and sauté in butter. Add tomatoes; simmer until onions and tomatoes are tender.
    * You may add water if mixture is too thick and sticking to pot.
  3. When onion and tomatoes are tender, add baking soda dissolved in some water. This will produce a foaming action. When this has subsided, add milk and heat carefully. Do not boil.

YIELD: Three to four servings.
