INGREDIENTS
- 6 lge. tomatoes, very ripened
- 1 lge. onion
- 1 tbsp. butter or olive oil
- 1/2 c. water *
- 1 tsp. baking soda
- 2 c. milk
- Salt & pepper, to taste
DIRECTIONS
- Peel and chop tomatoes.
- Dice onion and sauté in butter. Add tomatoes; simmer until onions and tomatoes are tender.
* You may add water if mixture is too thick and sticking to pot. - When onion and tomatoes are tender, add baking soda dissolved in some water. This will produce a foaming action. When this has subsided, add milk and heat carefully. Do not boil.
YIELD: Three to four servings.
