INGREDIENTS

  • 1-1/2 c. cold water
  • 1 egg
  • 2 tsp. salt
  • 3 - 4 cups flour
  • 4 potatoes
  • Water
  • Salt
  • Onion
  • Butter
  • 2 c. cream OR 1 c. cream plus 1 c. rich milk

DIRECTIONS

  1. Combine first 4 ingredients. Use enough flour to make a very stiff dough (around 4 cups, start with 3), working thoroughly as you do noodles.
  2. Prepare about 4 potatoes; cut as for french fries. Put in deep kettle with lots of water and salt. Bring to a boil.
  3. Cut dough into very tiny pieces with scissors; cut right into boiling water. Let boil about 20 minutes, then drain.
  4. Prepare an onion browned in butter; add about 2 cups of cream or 1 cup cream and 1 cup rich milk. Pour this over potatoes and buttons. Serve.
