INGREDIENTS
- 2 c. flour
- 2 c. sugar
- 1-1/2 tsp. cinnamon
- 2 tsp. baking powder
- 2 tsp. baking soda
- 1 tsp. salt
- 1-1/2 c. cooking oil
- 4 eggs, unbeaten
- 3 c. shredded carrots
DIRECTIONS
- Mix flour, sugar, cinnamon, baking powder, baking soda, salt, oil and eggs with mixer.
- Stir in carrots by hand.
- Pour into 3 layer pans.
- Bake at 350 degrees F. for 45 minutes. Frost when cool.
Frosting:
- 1-8 oz. pkg. cream cheese
- 1/2 c. butter or margarine
- 2-1/2 c. icing sugar
- 1 tsp. vanilla
Combine all ingredients. Frost cake.
