INGREDIENTS

  • 2 c. flour
  • 2 c. sugar
  • 1-1/2 tsp. cinnamon
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1-1/2 c. cooking oil
  • 4 eggs, unbeaten
  • 3 c. shredded carrots

DIRECTIONS

  1. Mix flour, sugar, cinnamon, baking powder, baking soda, salt, oil and eggs with mixer.
  2. Stir in carrots by hand.
  3. Pour into 3 layer pans.
  4. Bake at 350 degrees F. for 45 minutes. Frost when cool.

 

Frosting:
  • 1-8 oz. pkg. cream cheese
  • 1/2 c. butter or margarine
  • 2-1/2 c. icing sugar
  • 1 tsp. vanilla

Combine all ingredients. Frost cake.
