INGREDIENTS

  • 1 c. sifted cake flour
  • 1-1/2 c. granulated sugar, divided
  • 1-1/4 c. egg whites
  • 1 tsp. vanilla
  • 1/2 tsp. almond flavouring
  • 1/4 tsp. salt
  • 1-1/4 tsp. cream of tartar

DIRECTIONS

  1. Combine sifted cake flour and 1/2 cup sugar; sift 4 times.
  2. With electric mixer or wire whip, beat egg whites, flavourings, salt and cream of tartar. Beat until soft peaks form.
  3. Add remaining cup of sugar in fourths, beating in with a spatula after each addition.
  4. Sprinkle cake flour/sugar mixture over batter in fourths folding gently with spatula after each addition until dry ingredients are combined.
  5. Place batter in suitable cake pan; cut through with table knife to remove large air bubbles.
  6. Bake in preheated 375 degree F. oven for 35 minutes.
  7. Invert pan to cool.

YIELD: Serves sixteen.
