INGREDIENTS
- 1 c. sifted cake flour
- 1-1/2 c. granulated sugar, divided
- 1-1/4 c. egg whites
- 1 tsp. vanilla
- 1/2 tsp. almond flavouring
- 1/4 tsp. salt
- 1-1/4 tsp. cream of tartar
DIRECTIONS
- Combine sifted cake flour and 1/2 cup sugar; sift 4 times.
- With electric mixer or wire whip, beat egg whites, flavourings, salt and cream of tartar. Beat until soft peaks form.
- Add remaining cup of sugar in fourths, beating in with a spatula after each addition.
- Sprinkle cake flour/sugar mixture over batter in fourths folding gently with spatula after each addition until dry ingredients are combined.
- Place batter in suitable cake pan; cut through with table knife to remove large air bubbles.
- Bake in preheated 375 degree F. oven for 35 minutes.
- Invert pan to cool.
YIELD: Serves sixteen.
