INGREDIENTS
- 3 - 3-1/2 lb. frying chicken
- 1/2 c. flour
- 1/4 c. melted butter
- 2/3 of small can undiluted evaporated milk
- 1-10 oz. can cream of mushroom soup
- 1 c. grated process cheese
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 8 - 10 sm. onions
- 1/4 lb. sliced mushrooms
- Dash paprika
DIRECTIONS
- Coat chicken with flour. Arrange chicken in single layer with skins down in melted butter in baking dish.
- Bake, uncovered, in moderately hot oven (425 degrees F.) for 30 minutes.
- Turn chicken and bake until brown, 15 to 20 minutes. Pour off fat.
- Combine milk, soup, cheese, salt and pepper. Pour milk mixture over chicken, then sprinkle with paprika.
- Cover dish with foil and continue baking for 15 to 20 minutes.
YIELD: Serves six to eight.
