INGREDIENTS

  • 3 - 3-1/2 lb. frying chicken
  • 1/2 c. flour
  • 1/4 c. melted butter
  • 2/3 of small can undiluted evaporated milk
  • 1-10 oz. can cream of mushroom soup
  • 1 c. grated process cheese
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 8 - 10 sm. onions
  • 1/4 lb. sliced mushrooms
  • Dash paprika

DIRECTIONS

  1. Coat chicken with flour. Arrange chicken in single layer with skins down in melted butter in baking dish.
  2. Bake, uncovered, in moderately hot oven (425 degrees F.) for 30 minutes.
  3. Turn chicken and bake until brown, 15 to 20 minutes. Pour off fat.
  4. Combine milk, soup, cheese, salt and pepper. Pour milk mixture over chicken, then sprinkle with paprika.
  5. Cover dish with foil and continue baking for 15 to 20 minutes.

YIELD: Serves six to eight.
