INGREDIENTS

  • 3 - 4 c. chopped rhubarb (fresh or frozen)
  • 1 c. sugar
  • 3 oz. box strawberry gelatin
  • 1-1/2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. butter or margarine
  • 1 c. sugar
  • 1 egg
  • 3/4 c. milk
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • 1 tbsp. sugar

DIRECTIONS

  1. Mix rhubarb and 1 cup sugar. Place in 8x8 inch cake pan.
  2. Sprinkle gelatin over rhubarb.
  3. Mix next 8 ingredients to make cake batter. Pour over rhubarb mixture.
  4. Mix sugar and cinnamon. Sprinkle over batter.
  5. Bake at 350 degrees F. for 30 to 40 minutes.
