INGREDIENTS
- 3 - 4 c. chopped rhubarb (fresh or frozen)
- 1 c. sugar
- 3 oz. box strawberry gelatin
- 1-1/2 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. butter or margarine
- 1 c. sugar
- 1 egg
- 3/4 c. milk
- 1 tsp. vanilla
- 1 tsp. cinnamon
- 1 tbsp. sugar
DIRECTIONS
- Mix rhubarb and 1 cup sugar. Place in 8x8 inch cake pan.
- Sprinkle gelatin over rhubarb.
- Mix next 8 ingredients to make cake batter. Pour over rhubarb mixture.
- Mix sugar and cinnamon. Sprinkle over batter.
- Bake at 350 degrees F. for 30 to 40 minutes.
